Pear and Chocolate Cupcakes

makes 12

  • 115 g/4 oz butter, softened
  • 115 g/4 oz light soft brown sugar
  • 2 eggs
  • 100 g/3½ oz self-raising flour
  • ½ tsp baking powder
  • 2 tbsp cocoa powder
  • 4 canned pear halves, drained and sliced
  • 2 tbsp runny honey, warmed

 

Procedures:

  1. Preheat the oven to 190°C/375°F/Gas Mark 5, Put 12 paper cases in a shallow bun tin.
  2. Place the butter,sugar,eggs, flour, baking powder and cocoa powder in a large bowl, and beat until the mixture is just smooth. Spoon the mixture into the paper cases and smooth the tops. Arrange 2 pear slices on top of each cupcake.
  3. Bake the cupcakes in the preheated oven for 20 minutes or until risen and just firm to the touch. Transfer to a wire cooling rack. While the cupcakes are still warm, glaze with the honey, Leave to cool completely.

Mega Chip Cookies

makes 12

  • 225 g/8 oz butter softened
  • 140 g/5 oz caster sugar
  • 1 egg yolk, beaten
  • 2 tsp vanilla extract
  • 225 g/8 oz plain flour
  • 55 g/2 oz cocoa powder
  • pinch of salt
  • 85 g/3 oz white chocolate chips
  • 115 g/4 oz plain chocolate roughly chopped

 

Procedures:

  1. Preheat the oven to 190 C/375 F/ Gas Mark 5, Line 2 baking trays with baking paper.
  2. Put the butter and sugar into a bowl and mix well, then beat in the egg yolk and vanilla extract. Sift together the flour, cocoa powder and salt into the mixture, add both kinds of chocolate chips and stir until thoroughly combined.
  3. Make 12 balls of the mixture, put them onto the prepared baking trays, spaced well apart, and flatten slightly. Press the pieces of plain chocolate into the cookies.
  4. Bake in the preheated oven for 12-15 minutes. Leave to cool on the baking trays for 5-10 minutes, then transfer to write racks to cool completely.

White Chocolate Cookies

White Chocolate Cookies

makes 24

  • 115 g/4 oz butter softened
  • 115 g/4 oz soft brown sugar
  • 1 egg, beaten
  • 250 g/9 oz self-raising flour
  • pinch of salt
  • 125 g/4¼   oz white chocolate, chopped
  • 50 g/1¾   oz Brazil nuts, chopped.

Procedures

  1. Preheat the oven to 190°  C/375°  F/Gas Mark 5. Line 4 baking trays with baking paper.
  2. Put the butter and sugar into a bowl and mix well, then beat in the egg. Sift the flour and salt into the mixture, add the chocolate chunks and nuts and stir until thoroughly combined.
  3. Make 24 balls of the mixture, put them onto the prepared baking trays, spaced well apart, and flatten slightly.
  4. Bake in the preheated oven for 10-12 minutes, Leave to cool on the baking trays for 5-10 minutes, then transfer to wire racks to cool completely
